Sure….the pizza may have been delivery, but the ice cream? No way.

Yet another reason I will never be without a VitaMix again…FIVE minute ice cream. No foolin’.

Tonight we have, on the right, Wild Maine Blueberry, which seriously kicks ASS. I feel kind of sorry for it, because if that’s all I’d made, it would have been the best ice cream EVER. However, on the left – ZOMG TRIPLE raspberry. Three kinds of raspberries picked locally last summer: black, purple, and red. My god. Just about the only thing that could possible make this stuff any better would be to float it in vodka.

5-Minute Ice Cream
(adapted from VitaMix web recipes)

1 pound FROZEN fruit of choice
1/2 – 3/4 C sugar (to taste)
1 C heavy cream
1/2-1 C milk

optional: juice of 1/2 to 1 whole lemon or lime – it seems odd, but i find it makes a huge difference in cutting the ‘clingy’ mouthfeel of the cream without losing any of the richness you would if you used less cream and more milk instead.

1. Place ingredients in the container in the order listed.
2. Follow the VitaMix instructions for ice cream/sorbets, etc, run the speed up to high and – using the pusher thingie to get all the ingredients into the blades – process only until the mixture JUST barely starts to turn.
3. Turn out into a container and….well…generally we just eat it at this point, it’s ready & at ‘soft serve’ stage….but it does actually benefit from an hour in the fridge at this point to firm it up. Follow your own heart there, I won’t tell anyone.

Strawberry sorbet

Strawberry sorbet
300 grams strawberries
30 gr sugar (10% of the amount of berries, could be cut if berries are very sweet)
1 teaspoon vodka

1. Mix chopped strawberries and sugar, leave to macerate for 1 hour, stirring every now and then
2. Using hand mixer, mix strawberries to a soupy consistency
3. Filter the strawberry soup
4. Chill
5. Mix in ice cream maker
6. Once complete, add the vodka and leave in freezer to firm up

Before eating, allow it to soften in the fridge for 15 min or so
